Simple Salmon Cakes

olive oil
1 finely chopped smallish onion
1 diced celery stalk
some parsley, tarragon & pepper
about 14 oz. salmon
1 beaten egg
1 tbsp of lemon juice
about 1/2 cup of mayo
a tbsp or so of mustard
about a cup of crushed pita chips, sprouted bread crumbs OR crackers

Pre-heat oven to 450.

Sauté onion, celery & herbs in a pan with olive oil for a few minutes. Set aside.
In a bowl, mix salmon, egg, lemon juice, mayo & mustard.
Then add bread & onion/celery/herb mixture. Shape into cakes.

Cook cakes in a pan with oil over medium heat. Cook each side a few minutes.
Transplant to an oiled baking sheet & bake them for 10 minutes.

Makes 6 cakes
I serve them with a mayo, mustard, lemon & dill sauce.
