Sweet Potato Biscuits

From The Confederate Cookbook

2 C sifted all-purpose flour
3 tsp baking power
1/2 tsp baking soda
3/4 tsp salt
3/4 Tbsp brown sugar
dash of cinnamon
1/2 C melted butter
1 C boiled, peeled & mashed sweet potatoes
(or 15 oz can)
2/3 C buttermilk

Preheat oven to 450.
Sift flour, baking powder, baking soda, salt, brown sugar & cinnamon. Set aside.

In medium bowl, beat melted butter into the sweet potatoes. Add dry ingredients, stirring in a little at a time, alternating with buttermilk. Mix well enough to moisten all ingredients.

Form into a ball and turn out onto lightly floured surface. Lightly pat top side with flour as well, because batter will be sticky. Roll out to 1/2-3/4 inch thickness with floured rolling pin. Cut with floured biscuit cutter.

Bake 20-25 minutes. Makes 12-14 biscuits.
